Easy pesto pasta dinner.

Our cooking programs continue incorporating changes to meet government requirements for CoVid 19 including small group size, strict cleaning and physical distancing.

Try this delicious and economic winter dinner produced by several participants of Roads To Independence. The full list of ingredients is listed below.

They decided to swap one of the ingredients, pistachio nuts with pine nuts and were glad they did, preferring the crunchy texture. It was a delicious and easy meal,. They will give it a go at home, why don’t you try too.

Ingredients

  • 600g packet beef ravioli
  • 1 tablespoon extra virgin olive oil
  • 1 small red onion, halved, thinly sliced
  • 3 shortcut bacon rashers, trimmed, sliced
  • 150g green beans, trimmed, halved diagonally
  • 375g cherry tomatoes halved
  • 1 1/2 cups baby spinach
  • pistachio kernels

A Tip do not fully blend all ingredients in the pesto, just a gentle fold in.

Don’t forget to add a pile of grated cheese.

The recipe gives 8 portions and can be frozen. With the cost of under $35, that’s good value.
